Description: Ripe mulberry and plum with subtle vanillin oak complexity.
Tasting Notes: Fresh red berries with plum and underlying mint and spice. Cabernet Sauvignon gives the wine tannin structure and length, with Merlot fleshing out the mid palate.
Winemaking and Ageing: Fermentation took place for between 10 – 14 days with temperatures ranging from 18 - 28°C. During fermentation, regular assessment of colour and tannin extraction ensured parcels were soft and fruit driven in style. Maturation of selected batches of the wines in older French oak hogsheads for up to 12 months added approachability and softness to the wines prior to blending.
Food tips: Lamb, beef or other gamey red meat.
Best served at: Room Temperature.
The Vineyard: Sourced from a variety of premium regions across South Australia. A cool and dry winter proceeded the 2008 growing season. Dry conditions prevailed into spring and early summer requiring the implementation of supplementary irrigation to maintain healthy and protective grapevine canopies. Early February temperatures were slightly cooler than average in most regions, ideal for the gradual development of varietal characteristics.
