Winemaking and Ageing:
The fruit was harvested in the cool of the night at optimum
vineyard temperatures of less than 15º Celsius and delivered to the
winery. The fruit was de-stemmed, crushed and then gently pressed to
minimise the extraction of phenolics. Once clarified, the juice was
fermented at cool temperatures using selected yeast strains to enhance
the Riesling varietal characters.

The Vineyard:
Here, the Mediterranean climate, combined with various soil types that are generally low-fertility clay loam through to more sandy soils, produce full-bodied red wine and delicate whites. Many of the Barossa reds exhibit rich berry, stone fruit, liquorice and chocolate flavours. Whites exhibit traditional cooler climate characteristics that are lean, crisp and high in acidity.
